Dinner time deliciousness! (GAPS/AIP/Paleo)

It is that time of year again, when everyone is overwhelmed and inundated with zucchini and yellow squash fresh from the garden! As Dave Berry says, "The trouble is, you cannot grow just one zucchini. Minutes after you plant a single seed, hundreds of zucchini will barge out of the ground and sprawl around the garden, menacing the other vegetables. At night, you will be able to hear the ground quake as more and more zucchinis erupt." What a beautiful problem to have! As you are looking for fun and new ways to enjoy your summer squash, your culinary explorations with these "vegetables" can take you from India with Masala zucchini to Italy with Italian stuffed squash! We have been experimenting in our home and have come up with a light and simple dish that is perfect for a summer time meal!

Tri-Vegetable Noodles with Little Jedi's Awesome Sauce

2 large Zucchini and/or Yellow Squash

4 Carrots

4 large leaves Kale

2 cups Stock

1 cup Olive Oil

1/2 cup Flax Oil

2 Tb Cilantro

2 Tb Parsley

1-2 cloves Garlic

1 quarter Onion (red or yellow depending on what flavor you would like)

1 Tsp Ginger

1Tb Lemon or Lime Juice

1/4 tsp Salt

Noodles:

Use a noodle maker or peeler to make long strips of zucchini

and/or yellow squash and carrot.

Chiffonade the kale.

Simmer in stock for 30 minutes.

Or you can always leave them raw and enjoy your veggies fresh and

crunchy!

One day, my Little Jedi came to me wanting to create something new in the kitchen. I, obviously, could not say no to that request! After talking it through he decided that he wanted to make a new sauce. I gave him a variety of herbs and oils to mix into various dishes and the we sampled and voted on which was best. Here is what he came up with.

Awesome Sauce:

Put into a food processor the oils, cilantro, parsley, garlic, onion, ginger, citrus, and salt. Mix until everything is finely chopped and well combined.

You, most likely, will have left over sauce. Place in a mason jar with lid and store in your fridge. You can use it as a dressing for salads, as a marinade for chicken or it is amazing poured on top of brisket with onions.

Assembly:

Simply place the vegetable noodles on your place and pour as much sauce as you prefer onto your noodles. You can also add slices of grilled chicken or a lovely cheese like feta or parmesan to add layers of flavor and some protein.

Now, go out side. Sit and enjoy the fruits of your labor. Soak up some sun and give thanks. Summer is coming to an end soon. As I look outside at the aspens I see a tinge of yellow appearing. There is a nip in the air that was not there a few weeks ago. Fall is coming! So, for now, you will find me soaking up the last bits of summer! I will be out, enjoying the sunshine, and savoring the flavors of summer! I hope you join me!
